A quick example: One person asked for the best way to cook two large turkeys. “Yes, definitely cook them at the same time if they will both fit in your oven and if you have 2 roasting pans,” replied Clark. “If you don’t (or they don’t) one idea is to spatchcock them. Then spread them out on rimmed sheet pans to roast. You should be able to get both in the oven at the same time if you do it this way. Bonus: they will roast up in an hour or so.” See?
