Local Chefs Go Hog Wild

It’s time to go whole hog again in Washington. Cochon555 is the cooking competition that pits five local chefs against each other. The thing that sets this competition apart from any other is that each chef is given a different breed of heritage pig. They then create five dishes to serve to diners.

This year, the battle takes place Sunday, April 7 at the Newseum. Eater reports that the competing chefs are Mike Isabella, Jeff Buben, Kyle Bailey, Haidar Karoum, and Bryan Voltaggio. Isabella and Voltaggio have appeared in previous seasons of “Top Chef.”

Organizers want to introduce diners to heritage pork and shine a light on the farmers and butchers that fight to keep responsible family farming alive.

What can you expect?

Besides having five chefs prepare dishes, Cochon555 also pours glasses from five different wineries. According to their website, each diner can expect 2.1 pounds of pork at the party. After sampling dishes from each chef, diners may vote and the winner is crowned “Prince of Porc.”

Cochon555 parties will also take place in Boston, Chicago, Los Angeles, Miami, San Francisco, Vail and Seattle. The winners of each city will assemble in Aspen, CO for the “Grand Cochon,” where a national winner will be selected.
