Amid the ruinous state in which the pandemic has left countless restaurants in America, one oft-overlooked bright spot has been the trusty neighborhood pizzeria. No, we’re not talking about Domino’s or Papa John’s. We mean the greasy joint on the corner with the neon Budweiser sign and the chipped Formica countertop.
