Graydon Carter is keeping up with the American absinthe revival. His Waverly Inn restaurant is using absinthe cocktails as a selling point … There’s an absinthe/gin Martini and a Sazerac with added absinthe. That makes it one of New York’s first restaurants to sell absinthe (regardless of its resemblance to the true, high-sujone article) and sales, priced at $15 per cocktail, are reportedly high. If nothing else, this will make for an easy trend piece for a loathsome style-section writer pretty soon.
