As health experts make fresh attacks on excessive sodium in the American diet, Mintel polling last month found many consumers taking this concern with an unproverbial grain of salt. Thirty-four percent pay no mind to their salt intake; 22 percent control the amount they add to foods but don’t heed what’s already there. Twenty-six percent check labels for sodium but don’t systematically restrict their intake. Just 18 percent assign high importance to seeking low-sodium foods.
