Motivated largely by health considerations, 61 percent of respondents to an Allrecipes.com poll last month said that their families ate more seafood in 2008 than in the past. Tuna (canned or fresh) is the seafood respondents are most likely to eat (cited by 66 percent), followed by shellfish (53 percent) and tilapia (45 percent). Seventy-five percent included price and 64 percent noted freshness among the main factors that influence their choices of fish.
